There are places that aren't just visited… they're experienced. Between Metz and the Luxembourg border, in the small village of Malling, Alexis Baudin's restaurant is one of them. And today, it shines even brighter: a Michelin star recognizes a cuisine that is committed, sincere, and deeply rooted in its local area.
Here, there is no superfluous decor. Just a setting designed in harmony with nature, where a majestic, centuries-old cedar tree watches over guests like a silent witness to the passage of time. Around it, everything tells the same story: that of respectful, creative, and responsible gastronomy.
At Alexis Baudin's restaurant, the cuisine follows the rhythm of the seasons, never forcing nature. Rainwater is collected to supply the building and the vegetable garden, green waste becomes compost, and fruits and vegetables are grown as close as possible to the plate. Each product has a character, each ingredient a story, often brought to life by a passionate local producer.
This table is a true ode to French cuisine in its most vibrant form: a direct link with the land, the seasons, and those who cultivate it.
Behind this vision is a chef with an authentic background. Originally from Villeneuve-d'Ascq, Alexis Baudin discovered early on that cooking is much more than a profession: it's a language. Arriving in Lorraine in 1997, he honed his skills in renowned establishments before creating Le Pampre in 2015, beneath Metz Cathedral, where he has already established a creative and locally sourced cuisine.
With its new address in Malling, it goes even further: a 100% committed table, where the short supply chain is not a concept but a daily reality, where creativity serves taste, and where each plate tells a story about a territory.
